Do you differentiate between culture and society and if so how would you define the difference?

Yes, I do.

The difference is that Culture is mostly a verb, while Society is not.

What I mean to say is that both Culture and Society are systems of Human agency that have come about in order to connect, give meaning to, support, and define the world around Human Beings. However, Culture is best understood as everything pertaining to that (stated above) which resides purely in the abstract (psychological and memetic) framework, and Society is best understood as all those things which contribute to the above in terms of physical relationships and how we put or cultural abstractions into practical use in the world.

Something like a dance.

I agree and your description seems to be very compatible with Wilber's AQAL model.

The four quadrants are an abstraction like yin and yang. Of course there is no sharp dividing line between culture and society. They are more like two sides of the same coin only their relationship is dynamic and co-evolutionary in nature.

Society and civilization can encompass many cultures if it so desires; the inverse is not completely true.
